The Role: Apprentice Butcher

The Apprentice Butcher is responsible for cutting, trimming, scraping, and preparing meat and poultry products. This role is ideal for someone with experience working with perishable goods who is eager to learn and grow under the guidance of our Master Butchers.

What You’ll Do

• Cut, trim, scrape, and boat various cuts of meat or poultry
  • Prepare special customer‑requested cuts
  • Shape, lace, and tie roasts using knives, skewers, and twine
  • Prepare marinated, value‑added items and ready‑to‑cook foods
  • Assist Junior Butchers and Master Butchers with product plating
  • Train with Master Butcher Specialists to enhance cutting skills and product knowledge
  • Estimate requirements and requisition meat supplies to maintain inventory levels
  • Perform additional duties as assigned
  • Wear required oil‑ and slip‑resistant footwear
  • Lift up to 50 lbs as needed
  • Stand and walk 6–10 hours per shift • Perform bending, twisting, squatting, reaching, pushing, and pulling • Work with FDA‑approved cleaning chemicals and in areas with loud noise or flashing lights
  • Work frequently in cold and wet environments (‑10°F freezers and 32–40°F refrigerators)
  • Use tools and equipment including box cutters, electric pallet jacks, and heavy machinery
  • Support other business areas as needed

What You’ll Bring

• Familiarity with retail beef and pork cuts
  • Experience with lamb or veal is a plus
  • Strong understanding of production processes and operational methods
  • Ability to recognize various cuts, sizes, and species of meat
  • Ability to read production screens and follow cutting instructions
  • Skilled in using knives, band saws, and other butcher tools
  • Ability to communicate clearly in English; bilingual English/Spanish is a plus
  • Ability to work effectively within the meat team
  • Ability to follow written and verbal instructions
  • Understanding of equipment operation and care
  • Strong accuracy, thoroughness, and attention to detail
  • Able to follow policies and procedures and take accountability
  • Strong time‑management and productivity skills
  • Must embody and demonstrate company values and culture

$17.75/hr
